Hazelnut Cheesecake

• 1 1/2 cups of crushed vegan chocolate cookies
• 1/2 cup of melted vegan butter
• 1 1/2 cups of roasted hazelnuts, finely ground
• 1 cup of cream cheese
• 1 cup of coconut cream
• 1/2 cup of maple syrup
• 1 teaspoon of vanilla extract
• 1/4 teaspoon of salt
• 1 1/4 cups of vegan chocolate chips


. Preheat your oven to 350°F (175°C).
. In a bowl, combine the crushed chocolate cookies ,chopped hazelnut and melted vegan butter. Press the mixture into a pie dish to create the crust.
. Bake the crust for 10 minutes and then let it cool.
. In a blender, mix the ground hazelnuts, Cream cheese, coconut cream, maple syrup, vanilla extract, and salt until smooth.
. Melt the vegan chocolate chips and fold them into the hazelnut mixture.
. Pour the chocolate hazelnut filling into the cooled crust.
. Refrigerate the pie for at least 4 hours or until set.
. Garnish with additional crushed hazelnuts or shaved vegan chocolate before serving.
