Bisquick Chicken Fingers

Ingredients:

  • 1 lb boneless, skinless chicken breast, cut into strips
  • 1 cup Bisquick mix
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • Cooking spray or melted butter, for brushing

Instructions:

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, combine the Bisquick mix, Parmesan cheese, garlic powder, paprika, salt, and black pepper. Stir well to combine.
  3. In a separate shallow dish, beat the eggs.
  4. Dip each chicken strip into the beaten eggs, then coat it with the Bisquick mixture, pressing gently to adhere. Repeat with all chicken strips.
  5. Place the coated chicken strips onto the prepared baking sheet. You can use cooking spray or brush them with melted butter for extra crispiness.
  6. Bake the chicken fingers in the preheated oven for 12-15 minutes, or until they are golden brown and cooked through.
  7. Remove from the oven and let them cool for a few minutes before serving.
  8. Serve hot with your favorite dipping sauce, such as honey mustard, barbecue sauce, or ranch dressing.
  9. Enjoy your delicious and crispy Bisquick Chicken Fingers!

Note: You can also prepare these chicken fingers ahead of time and freeze them for a quick and convenient meal option. Simply place the coated chicken strips on a baking sheet and freeze until solid, then transfer them to a resealable plastic bag or container. When ready to bake, follow the same baking instructions, but increase the baking time by a few minutes to ensure they are cooked through.
