Cream Cheese Chicken Enchiladas

Ingredients:

1 lb. boneless, skinless chicken breasts, cooked and shredded

1 (8 oz.) package cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup sour cream

1 can diced green chiles

1/4 cup chopped fresh cilantro

8-10 flour tortillas

1 can enchilada sauce

Salt and pepper, to taste

Directions:

1.Preheat oven to 375°F (190°C).

2.In a large bowl, mix together shredded chicken, cream cheese, cheddar cheese, sour cream, diced green chiles, cilantro, salt, and pepper.

3.Place 2-3 tablespoons of filling onto each tortilla and roll up tightly. .Place enchiladas seam-side down in a greased 9×13-inch baking dish.

4.Pour enchilada sauce over the top of the tortillas, and sprinkle with remaining cheddar cheese.

5.Bake for 20-25 minutes, or until cheese is melted and bubbly.
