Ingredients:

• 1.5 lbs (680g) chicken breasts, thinly sliced
• 3 bell peppers (any color), thinly sliced
• 1 large onion, thinly sliced
• 3 tbsp olive oil
• 1 packet of fajita seasoning mix
• Salt and pepper to taste
• Warm tortillas for serving
• Optional toppings: shredded cheese, guacamole, sour cream, salsa

Directions:

. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
. In a bowl, toss the chicken, bell peppers, and onions with olive oil and fajita seasoning until well coated.
. Spread the mixture evenly onto the prepared sheet pan. Season with salt and pepper to taste.
. Roast in the preheated oven for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.
. While the fajitas are cooking, warm up the tortillas in the oven or microwave.
