Ingredients

For the Bread Base
  • 1 loaf Brioche Bread Can substitute with gluten-free or dairy-free bread as needed.
For the Custard
  • 6 large Eggs Ensure they are at room temperature for optimal results.
  • 2 cups Almond Milk Can substitute with regular milk for a richer flavor.
  • 1 cup Non-Dairy Creamer or Heavy Cream Use heavy cream for a richer texture.
  • 2 tablespoons Dijon Mustard Use ground mustard as an alternative for a spicier punch.
  • 1 teaspoon Garlic Powder Fresh garlic can also be used for a more intense taste.
  • 1 tablespoon Dried or Fresh Thyme Fresh thyme is recommended when available.
For the Filling
  • 2 cups Cooked Ham Feel free to swap with cooked bacon or sausage.
  • 2 cups Grated Cheese (Gruyère and Cheddar) Substitute with your favorite cheeses.

Equipment

  • 9 x 13 baking dish
  • Mixing bowl
  • Non-stick skillet

Method

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9 x 13 baking dish with butter or cooking spray.
  2. Cube the stale brioche bread into 1.5-inch cubes and place in a large bowl.
  3. Whisk together the large eggs, almond milk, non-dairy creamer or heavy cream, Dijon mustard, thyme, garlic powder, salt, and pepper until smooth.
  4. Pour the custard over the cubed bread and mix gently until each piece is coated. Let sit for 15 minutes.
  5. Sauté the cooked ham in a non-stick skillet over medium heat until lightly caramelized, about 5-7 minutes.
  6. In the greased baking dish, layer half of the soaked bread mixture, half of the sautéed ham, and half of the grated cheese.
  7. Repeat the layering process with the remaining soaked bread, ham, and cheese.
  8. Bake uncovered for 30-40 minutes, or until the top is golden brown and puffed.
  9. Let the dish rest for 10-15 minutes before slicing.
  10. Slice into squares and serve warm with fresh fruit or a tossed salad.
