- Preheat your oven to 350°F (175°C). Gather your ingredients while the oven warms up.
- In a large skillet over medium heat, combine approximately one pound of ground beef and one chopped onion. Cook for about 5-7 minutes until browned and translucent. Drain excess fat.
- Stir in one can of black beans, one can of diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and black pepper. Simmer for about 5 minutes.
- In a separate bowl, whisk together one cup of cornmeal, one cup of milk, and one egg until smooth.
- Grease a 9x13-inch baking dish. Spread half of the cornmeal mixture across the bottom, followed by the beef filling.
- Pour the remaining cornmeal mixture over the beef layer, smoothing it out. Add shredded cheddar cheese and sliced black olives on top if desired.
- Bake for 30-35 minutes until the crust is golden brown and set.
- Remove from the oven and let cool for about 10 minutes. Garnish with chopped fresh cilantro before serving.
