Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients while the oven warms up.
  2. In a large skillet over medium heat, combine approximately one pound of ground beef and one chopped onion. Cook for about 5-7 minutes until browned and translucent. Drain excess fat.
  3. Stir in one can of black beans, one can of diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and black pepper. Simmer for about 5 minutes.
  4. In a separate bowl, whisk together one cup of cornmeal, one cup of milk, and one egg until smooth.
  5. Grease a 9x13-inch baking dish. Spread half of the cornmeal mixture across the bottom, followed by the beef filling.
  6. Pour the remaining cornmeal mixture over the beef layer, smoothing it out. Add shredded cheddar cheese and sliced black olives on top if desired.
  7. Bake for 30-35 minutes until the crust is golden brown and set.
  8. Remove from the oven and let cool for about 10 minutes. Garnish with chopped fresh cilantro before serving.
