  • 2 medium Medium Red Onions Can substitute with yellow onions.
  • 2 tablespoons Butter Olive oil can be used for dairy-free option.
  • 1 teaspoon Smoked Paprika Regular paprika can be used if needed.
  • 2 teaspoons Wholegrain Mustard Dijon mustard works for a smoother flavor.
  • 2 teaspoons Fresh Herbs (Thyme and Rosemary) Dried herbs can be used.
  • 200 grams Mature Cheddar Cheese Can substitute with a milder cheese.
  • 50 grams Parmesan Cheese Use vegetarian hard cheese if necessary.
For the Pastry
  • 2 sheets Puff Pastry Sheets Ready-made for convenience.
  • 1 large Egg (whisked) Omit for vegan rolls.
  • 1 tablespoon Nigella Seeds or Poppy Seeds Optional but recommended.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F). Grease a glass baking dish with butter, add sliced medium red onions and remaining butter, cover with foil, and bake for about 1 hour, stirring every 15 minutes.
  2. Poke holes in small to medium potatoes with a fork, wrap in foil, and place on a baking tray alongside onions. Bake until soft, about 45-60 minutes.
  3. Remove baked potatoes and let cool slightly. Scoop out insides into a mixing bowl, add caramelized onions, wholegrain mustard, smoked paprika, fresh herbs, and cheeses. Mix well and chill in the fridge for about 30 minutes.
  4. Roll out puff pastry sheets on a clean surface, cut into 8 squares, place a scoop of filling on one side of each square, fold pastry over, and seal edges.
  5. Carefully transfer rolls to a parchment-lined baking sheet, brush tops with egg wash, sprinkle with seeds, and bake for 15-20 minutes until golden brown.
