- Preheat your oven to 200°C (400°F). Grease a glass baking dish with butter, add sliced medium red onions and remaining butter, cover with foil, and bake for about 1 hour, stirring every 15 minutes.
- Poke holes in small to medium potatoes with a fork, wrap in foil, and place on a baking tray alongside onions. Bake until soft, about 45-60 minutes.
- Remove baked potatoes and let cool slightly. Scoop out insides into a mixing bowl, add caramelized onions, wholegrain mustard, smoked paprika, fresh herbs, and cheeses. Mix well and chill in the fridge for about 30 minutes.
- Roll out puff pastry sheets on a clean surface, cut into 8 squares, place a scoop of filling on one side of each square, fold pastry over, and seal edges.
- Carefully transfer rolls to a parchment-lined baking sheet, brush tops with egg wash, sprinkle with seeds, and bake for 15-20 minutes until golden brown.
