- Preheat your oven to 350°F (175°C) and grease a springform pan.
- Combine the vegan cake mix, plant-based milk, baking powder, and coconut sugar in a bowl. Mix until smooth.
- Pour the batter into the prepared pan and bake for 25-30 minutes until a toothpick comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Whip the chilled vegan heavy cream until soft peaks form. Melt the dark chocolate chips and fold into the whipped cream.
- Once the cake is cool, spread a layer of mousse on top. Repeat layering if you have multiple layers.
- Melt the vegan butter and remaining dark chocolate chips for the ganache. Pour over the assembled cake.
- Refrigerate the cake for at least 2-4 hours before serving.
