For the Chocolate Mousse
  • 1 cup Vegan Heavy Cream Can be substituted with coconut cream.
  • 1 cup Dark Chocolate Chips Use dairy-free.
For the Ganache
  • 1/4 cup Vegan Butter Coconut oil also works.
  • 1/2 cup More Dark Chocolate Chips For finishing.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a springform pan.
  2. Combine the vegan cake mix, plant-based milk, baking powder, and coconut sugar in a bowl. Mix until smooth.
  3. Pour the batter into the prepared pan and bake for 25-30 minutes until a toothpick comes out clean.
  4. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  5. Whip the chilled vegan heavy cream until soft peaks form. Melt the dark chocolate chips and fold into the whipped cream.
  6. Once the cake is cool, spread a layer of mousse on top. Repeat layering if you have multiple layers.
  7. Melt the vegan butter and remaining dark chocolate chips for the ganache. Pour over the assembled cake.
  8. Refrigerate the cake for at least 2-4 hours before serving.
