  4. Cook the mixture until it reaches 252°F, monitoring with a candy thermometer.
  5. Remove from heat and fold in ground cinnamon and flaky sea salt.
  6. Pour the caramel into the prepared pan and let it cool at room temperature.
  7. Once set, cut into squares and sprinkle with additional flaky sea salt before serving.
