For the Cake
  • 1 cup All-purpose flour spooned and leveled
  • 3/4 cup Unsweetened cocoa powder dark cocoa for richer flavor
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1 cup White granulated sugar brown sugar for caramel hint
  • 2 large Large eggs room temperature
  • 1/2 cup Oil (canola or vegetable) or use melted butter
  • 1 tsp Pure vanilla extract fresh as possible
  • 1 cup Buttermilk regular milk with a bit of vinegar is okay
  • 1 cup Hot water steamed, not boiling
For the Brownie Layer
  • 1 cup Sugar beaten well with eggs
  • 2 large Eggs room temperature
  • 1/2 cup Butter melted
  • 1/2 cup Flour minimum for gooeyness
  • 1/3 cup Cocoa powder fresh
  • 2 tbsp Cornstarch
  • 1/4 tsp Salt
  • 1 cup Chocolate chips for pockets of chocolate
For the Frosting
  • 8 oz Cream cheese room temperature
  • 1/2 cup Unsalted butter room temperature
  • 3 cups Powdered sugar sifted
  • 1/4 cup Unsweetened cocoa powder fresh
  • 1 tsp Pure vanilla extract for frosting

Method
 

Cake Preparation
  1. Preheat your oven to 350°F (175°C). Prepare three 8-inch round cake pans with nonstick spray and parchment.
  2. Sift together the flour, cocoa powder, baking soda, baking powder, salt, and sugar in a bowl.
  3. Whisk eggs, oil, vanilla, and buttermilk in another bowl. Gradually mix in the hot water.
  4. Combine wet and dry ingredients, stir until just combined, and divide into prepared pans.
  5. For the brownie batter, beat sugar and eggs until fluffy, then mix in melted butter, oil, and dry ingredients, and fold in chocolate chips.
  6. Drop brownie batter onto cake batter and swirl to create a marbled look.
  7. Bake for 30-35 minutes until a toothpick comes out with moist crumbs; cool for 10 minutes in pans.
Frosting and Assembly
  1. Remove cakes from pans and cool completely on a wire rack.
  2. Beat cream cheese and butter until fluffy, add powdered sugar and cocoa, mix until smooth, and finish with vanilla.
  3. Level cake layers if needed. Stack with frosting between layers, apply a crumb coat, and chill for 15 minutes.
  4. Smooth final frosting on the cake and decorate as desired with chocolate shavings or sprinkles.
  5. Slice and serve with ice cream or berries.
