- Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or grease lightly.
- Peel 2-3 overripe bananas into a medium bowl and mash them until smooth.
- Add 1 beaten egg, ½ cup melted butter, and 1 teaspoon vanilla extract to the mashed bananas and mix.
- In a separate bowl, whisk together 1½ cups flour, ¾ cup brown sugar, 1 teaspoon baking soda, and a pinch of salt.
- Fold the dry ingredients into the wet banana mixture until just combined.
- Optional: Fold in ½ cup chocolate chips or walnuts, if desired.
- Fill muffin liners about ¾ full with the batter.
- Bake for 15-21 minutes, or until a toothpick comes out clean.
