- In a mixing bowl, combine softened cream cheese, mayonnaise, garlic powder, cayenne pepper, and a pinch of kosher salt. Blend the ingredients until smooth and creamy, about 2-3 minutes.
- Fold in the grated cheddar cheese and finely chopped salami into the cream cheese mixture until evenly distributed.
- Slice the whole pickles lengthwise into halves or quarters about 1/4 inch thick and place cut-side up on a cutting board.
- Spread an even layer of the cream cheese filling over the inside of each pickle half.
- Roll each filled pickle half tightly and secure with toothpicks or slice into sushi-sized pieces.
- Arrange the rolled or sliced Pickle Sushi on a platter and serve with grainy mustard for dipping.
