Triple Chocolate Mousse Cake


• 1 cup of dark chocolate chips
• 1 cup of milk chocolate chips
• 1 cup of white chocolate chips
• 1 cup of heavy cream, divided
• 1/2 cup of unsalted butter
• 1 cup of granulated sugar, divided
• 4 large eggs, separated
• 1 teaspoon of vanilla extract
• 1/4 teaspoon of salt
• 1/4 cup of cocoa powder
• 2 teaspoons of instant coffee (optional)
• Chocolate shavings for garnish


. In separate bowls, melt dark, milk, and white chocolate chips with 1/3 cup of heavy cream each. Set aside to cool.
. In a mixing bowl, beat egg yolks with 1/2 cup of sugar until creamy. Add melted dark chocolate, butter, and vanilla extract. Mix until smooth.
. In another bowl, beat egg whites with salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture until well combined.
. In a separate bowl, whip 2/3 cup of heavy cream until stiff peaks form. Divide evenly into three parts and fold one part into each chocolate layer.
. Pour the dark chocolate layer into a prepared cake pan and refrigerate until set. Repeat with milk and white chocolate layers, allowing each to set before adding the next.
. Once all layers are set, dust the top with cocoa powder and sprinkle chocolate shavings for a finishing touch.
