Strawberry Cheesecake

• 1 ½ cups graham cracker crumbs
• ½ cup unsalted butter, melted
• 16 oz cream cheese, softened
• ½ cup powdered sugar
• 1 tsp vanilla extract
• 1 cup Greek yogurt
• 1 cup frozen strawberries, thawed
• 1 cup heavy cream
• ¼ cup granulated sugar


. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator while preparing the filling.
. In a large mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Spread over the crust evenly.
. In a blender, combine Greek yogurt and thawed strawberries. Blend until smooth. Pour over the cream cheese layer.
. In another mixing bowl, whip heavy cream and granulated sugar until stiff peaks form. pour over the strawberry mixture and mix well .
. Pour over the cream cheese layer.
. Cover and refrigerate for at least 4 hours or until set.
. Before serving, garnish with fresh strawberries if desired.
