Red Velvet Cookies

• 1 cup unsalted butter, softened
• 1 cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 2 1/2 cups all-purpose flour
• 1/3 cup cocoa powder
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1 tablespoon red food coloring
• 1 cup white chocolate chips
• 1 cup cream cheese, softened
• 1/2 cup powdered sugar

. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
. In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until well combined. Fold in the red food coloring and white chocolate chips.
. In another bowl, mix the cream cheese and powdered sugar until smooth.
. Scoop out tablespoon-sized portions of cookie dough, flatten them, and place a teaspoon of the cream cheese mixture in the center. Fold the edges of the dough over the cream cheese, sealing it inside.
. Arrange the stuffed cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are set.
. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
