Ingredients:
• 1 1/2 cups graham cracker crumbs
• 1/4 cup granulated sugar
• 1/2 cup unsalted butter, melted
• 2 (8 oz) packages cream cheese, softened
• 1/2 cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1/2 cup pumpkin puree
• 1 teaspoon pumpkin pie spice
Directions:
. Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
. In a bowl, mix together graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press about 1 tablespoon of the mixture into the bottom of each muffin cup.
. In another bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
