• 1 1/2 cups crushed chocolate cookies
• 1/3 cup melted butter
• 3 (8 oz) packages of cream cheese
• 1 cup granulated sugar
• 1/4 cup Baileys Irish Cream
• 1 tsp pure vanilla extract
• 3 large eggs
• 1/2 cup sour cream
• 1/2 cup heavy cream
• 1/4 cup all-purpose flour
• 1/4 cup cocoa powder
• 1/4 cup semi-sweet chocolate chips

. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
. In a bowl, combine the crushed chocolate cookies and melted butter. Press this mixture firmly into the bottom of the prepared pan to form the crust.
. In a separate bowl, beat the cream cheese and granulated sugar until smooth and creamy.
. Add Baileys Irish Cream and vanilla extract to the cream cheese mixture, mixing until well combined.
. Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
. Gently fold in the sour cream, heavy cream, flour, and cocoa powder until the batter is smooth.
. Stir in the semi-sweet chocolate chips.
. Pour the cheesecake batter over the cookie crust in the pan, smoothing the top.
. Bake in the preheated oven for 50-60 minutes, or until the edges are set, and the center is slightly jiggly.
. Turn off the oven and leave the cheesecake inside for an additional hour with the oven door slightly ajar.
. Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.
. Serve chilled, garnished with whipped cream, chocolate shavings, and a drizzle of Baileys if desired.
