Lemon Curd Tart

• 1 1/2 cups all-purpose flour
• 1/2 cup unsalted butter, chilled and cubed
• 1/4 cup powdered sugar
• Pinch of salt
• 4 large eggs
• 1 cup granulated sugar
• 1/2 cup freshly squeezed lemon juice
• Zest of 2 lemons
• 1/2 cup unsalted butter, room temperature


. Preheat your oven to 350°F (175°C).
. In a food processor, combine flour, chilled butter cubes, powdered sugar, and salt. Pulse until the mixture resembles coarse crumbs.
. Press the mixture into the bottom and up the sides of a tart pan. Prick the bottom with a fork and bake for 15-20 minutes, or until lightly golden brown. Allow to cool completely.
. In a heatproof bowl, whisk together eggs, granulated sugar, lemon juice, and lemon zest. Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn’t touch the water. Cook, whisking constantly, until the mixture thickens, about 10-15 minutes.
. Remove the bowl from heat and whisk in the room temperature butter until smooth. Pour the lemon curd into the cooled tart shell and spread evenly.
. Chill the tart in the refrigerator for at least 2 hours before serving.
. Dust with powdered sugar. Slice, serve, and enjoy the tangy goodness
