Ingredients:
• 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
• 1/2 cup unsalted butter
• 1 large onion, diced
• 4 garlic cloves, minced
• 1 tsp ground ginger
• 1 tsp chili powder
• 1 tsp ground turmeric
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1/2 tsp salt
• 1/2 tsp black pepper
• 1 cup tomato puree
• 1 cup heavy cream
• 2 tbsp fresh cilantro, chopped
• Directions:
1.In a large skillet over medium-high heat, melt butter. Add chicken and cook until browned on all sides.
2.Remove chicken from skillet and set aside. In the same skillet, add onion and garlic and sauté until softened.
3.Add ginger, chili powder, turmeric, cumin, coriander, salt, and black pepper to the skillet. Cook until fragrant, stirring constantly.
4.Add tomato puree to the skillet and stir until well combined. Cook for a few minutes until slightly thickened.
5.Add heavy cream to the skillet and stir until well combined. Bring to a simmer and let cook for 5-10 minutes, or until sauce has thickened.
6.Add cooked chicken back to the skillet and stir until well coated in the sauce. Simmer for an additional 5-10 minutes, or until chicken is cooked through.
7.Serve with rice and sprinkle with fresh cilantro on top.
