Coffee Pavlova

• 3 egg whites
• 1/2 cup granulated sugar
• 1 teaspoon instant coffee powder
• 1/2 teaspoon white vinegar
• 1/2 teaspoon cornstarch
• 1/2 cup heavy cream
• 1/4 cup white chocolate chips, melted
• Fresh raspberries, for topping
• Chocolate shavings, for garnish


. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
. In a clean, dry mixing bowl, beat the egg whites until soft peaks form.
. Gradually add in the sugar, instant coffee powder, vinegar, and cornstarch while continuing to beat until stiff peaks form and the mixture is glossy.
. Spoon the meringue mixture onto the prepared baking sheet, forming two individual pavlovas.
. Bake in the preheated oven for 1 hour, then turn off the oven and let the pavlovas cool completely inside the oven with the door slightly ajar.
. In a separate mixing bowl, whip the heavy cream until soft peaks form. Gently fold in the melted white chocolate until fully incorporated.
. To assemble, place one pavlova on a serving plate, top with a generous dollop of the white chocolate cream filling, Repeat with the second pavlova.
. Top with fresh raspberries, and chocolate shavings.
