Chocolate Cupcakes

• 1 and 1/2 cups all-purpose flour

• 1/4 cup unsalted butter, softened
• 2 cups powdered sugar
• 2-3 tablespoons milk or cream
• 1/2 cup mini chocolate chips

Directions:

. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
. Add the vegetable oil, eggs, vanilla extract, and buttermilk to the dry ingredients. Mix until smooth.
. Gradually stir in the hot water until the batter is well combined. Fold in the mini chocolate chips.

For the frosting:
. In a mixing bowl, cream together the peanut butter and softened butter until smooth.
