Chocolate Cupcakes

• 1 and 1/2 cups all-purpose flour
• 1 cup granulated sugar

For the frosting:

• 1/2 cup creamy peanut butter
• 1/4 cup unsalted butter, softened
• 2 cups powdered sugar
• 2-3 tablespoons milk or cream
• 1/2 cup mini chocolate chips


. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
. Add the vegetable oil, eggs, vanilla extract, and buttermilk to the dry ingredients. Mix until smooth.
. Gradually stir in the hot water until the batter is well combined. Fold in the mini chocolate chips.
. Fill each cupcake liner about 2/3 full with batter. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely before frosting.
For the frosting:
. In a mixing bowl, cream together the peanut butter and softened butter until smooth.
. Gradually add the powdered sugar, mixing until well combined.
. Add milk or cream, 1 tablespoon at a time, until the frosting reaches your desired consistency.
