Chocolate Cherry Upside-Down Cake

Ingredients:

• 1 cup all-purpose flour
• 1/2 cup cocoa powder
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup unsalted butter, softened
• 1 cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1/2 cup buttermilk
• 1 can (21 oz) cherry pie filling

Directions:

. Preheat your oven to 350°F (175°C) and grease a round cake pan.
. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
. In another bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with the dry mixture. Mix until just combined.
. Spread cherry pie filling evenly over the bottom of the prepared pan.
. Pour the cake batter over the cherries, spreading it evenly.
. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
. Allow the cake to cool in the pan for 10 minutes, then invert it onto a serving plate.
