Ingredients:
• 1 1/2 cups graham cracker crumbs
• 1/4 cup granulated sugar
• 1/2 cup unsalted butter, melted
• 16 oz cream cheese, softened
• 1/2 cup granulated sugar
• 2 large eggs
• 1 tsp vanilla extract
• 2 medium apples, diced
• 2 tbsp unsalted butter
• 2 tbsp brown sugar
• 1/2 tsp cinnamon
• 1/4 cup caramel sauce
Directions:
. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
. In a medium bowl, mix together the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter until well combined. Press the mixture evenly into the bottom of the prepared pan.
. In another bowl, beat the cream cheese and 1/2 cup granulated sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
. Pour the cream cheese mixture over the graham cracker crust and spread it into an even layer.
. In a skillet, melt 2 tablespoons of butter over medium heat. Add the diced apples, brown sugar, and cinnamon. Cook, stirring occasionally, until the apples are tender and caramelized, about 5-7 minutes.
. Spread the caramelized apples over the cheesecake layer. Drizzle the caramel sauce on top.
. Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
. Allow the cheesecake bars to cool completely in the pan on a wire rack. Then, refrigerate for at least 3 hours, or until firm.
. Once chilled, lift the cheesecake bars out of the pan using the parchment paper overhang. Cut into squares and serve.
