Apple Oatmeal Cheesecake

• 2 cups oats
• 1/2 cup melted butter
• 2 cups chopped apples
• 1/4 cup brown sugar
• 1 teaspoon cinnamon
• 16 oz cream cheese, softened
• 1/2 cup granulated sugar
• 2 eggs
• 1 teaspoon vanilla extract


. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
. In a bowl, mix oats and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
. Using a mixer, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
. Pour the cream cheese mixture over the oat crust.
. In another bowl, combine chopped apples, brown sugar, and cinnamon. Spread this mixture evenly over the cream cheese mixture.
. Sprinkle some of buttered oat on top.
