Ingredients:
• 1 lb beef stew meat ????
• 1 large onion, diced ????
• 2 cloves garlic, minced ????
• 1 can (6 oz) tomato paste ????
• 2 tablespoons Italian seasoning ????
• 2 cups beef broth ????
• 1 bay leaf ????
• Salt and pepper, to taste ????
• Olive oil, for cooking ????
• Chopped fresh parsley, for garnish ????
Instructions:
Step 1: Heat a large pot or Dutch oven over medium heat. Add a drizzle of olive oil. ????????
Step 2: Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside. ????????
Step 3: In the same pot, add the diced onion and minced garlic. Sauté until softened and fragrant. ????????????
Step 4: Add the tomato paste and Italian seasoning. Cook for 2-3 minutes, stirring frequently. ????????????
Step 5: Return the browned beef stew meat to the pot. Add the beef broth, bay leaf, salt, and pepper. Bring to a boil. ????????????
Step 6: Reduce heat to low, cover the pot, and simmer for 1-2 hours, or until the meat is tender and flavors have melded together. ????????????????
Step 7: Remove the bay leaf and discard. Taste and adjust seasoning, if needed. ????????
Step 8: Serve hot, garnished with chopped fresh parsley.
