Ingredients:
• 1 cup of almond flour
• 1/2 cup of granulated sugar
• 1/4 teaspoon of almond extract
• 1/4 teaspoon of vanilla extract
• 1 egg white
• 20 whole almonds for garnish
• Powdered sugar for dusting
Directions:
. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
. In a mixing bowl, combine almond flour, granulated sugar, almond extract, and vanilla extract.
. In a separate bowl, whisk the egg white until frothy.
. Gently fold the frothy egg white into the almond mixture until you have a smooth, slightly sticky dough.
. Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet, leaving some space in between.
. Press a whole almond into the center of each cookie.
. Bake in the preheated oven for 12-15 minutes or until the cookies are lightly golden.
. Remove from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
