Ingredients:
• 1 cup crushed chocolate graham crackers
• 2 tablespoons melted butter
• 8 oz cream cheese, softened
• 1/4 cup granulated sugar
• 1 teaspoon vanilla extract
• 1 egg
• 1/2 cup mini Rolo candies
Directions:
. Preheat your oven to 325°F (160°C).
. In a bowl, mix the crushed chocolate graham crackers and melted butter.
. Press the crumb mixture into the bottoms of a muffin tin to form the crust.
. In another bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
. Add the egg and continue to beat until well combined.
. Gently fold in the mini Rolo candies into the cream cheese mixture.
. Spoon the cheesecake mixture on top of the crusts in the muffin tin, filling each cup about 2/3 full.
. Bake in the preheated oven for 20-25 minutes, or until the edges are set but the centers are slightly jiggly.
. Remove from the oven and let them cool in the muffin tin for about 10 minutes.
. Once cooled, transfer the mini Rolo cheesecakes to the refrigerator and chill for at least 2 hours, or until fully set.
