To make this recipe, you’ll need:

  • 1 cup long-grain white rice
  • 1 tablespoon vegetable oil
  • 1/2 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 cup chicken broth
  • 1/2 cup tomato sauce
  • 1/2 cup frozen peas (optional)
  • Chopped fresh cilantro for garnish (optional)

To make the rice, heat the oil in a saucepan over medium heat. Add the onion and garlic and cook until soft, about 5 minutes. Stir in the rice and cook for an additional 2 minutes, stirring constantly. Add the cumin, chili powder, and salt and stir to combine. Pour in the chicken broth and tomato sauce and stir to combine. Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.

If desired, stir in the frozen peas and cook for an additional 5 minutes. Garnish with fresh cilantro and serve hot.
