Mexican Casserole

Ingredients:

  • 1 lb extra lean ground beef ????
  • 1 onion, chopped ????
  • 1 green pepper, chopped ????
  • 1 (14 1/2 ounce) can diced tomatoes ????
  • 1 (4 ounce) can diced green chilies ????️
  • 1/4 cup taco seasoning ????
  • 1/4 cup water ????
  • 1 cup reduced-fat shredded cheddar cheese ????
  • 2 cups crushed tortilla chips ????

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown ground beef with onions and green peppers until beef is no longer pink. Drain any excess fat.
  3. Add diced tomatoes, green chilies, taco seasoning, and water to skillet. Simmer for 10 minutes.
  4. In a 2-quart baking dish, layer half of the beef mixture, half of the crushed tortilla chips, and half of the shredded cheddar cheese. Repeat layers with remaining ingredients.
