Step-by-Step Instructions for Easy Mexican Coleslaw
  1. In a small mixing bowl, combine the mayonnaise, sour cream, lime juice, and taco seasoning. Whisk until well blended and smooth.
  2. In a large bowl, add the coleslaw mix, diced red bell pepper, halved grape tomatoes, rinsed black beans, and drained grilled corn. Add finely chopped jalapeno and chopped cilantro, then gently fold the ingredients together.
  3. Pour the dressing over the mixed vegetables and stir until all the veggies are coated, being careful not to overmix.
  4. Sprinkle with kosher salt and freshly ground black pepper to taste. Stir gently to integrate the seasoning.
