  • 2 cloves Garlic minced

  • 1 tsp Kosher Salt adjust to taste
  • 1/2 tsp Black Pepper freshly ground
  • 2 tbsp Oil for cooking; ensure skillet is prepped
For the Creamy Cilantro Sauce
  • 1 cup Fresh Cilantro or parsley as an alternative
  • 1/2 cup Mayonnaise dairy-free for a lighter option
  • 1/2 cup Cottage Cheese can be skipped for dairy-free version
  • 1 tbsp Distilled White Vinegar adjust for acidity

Method
 

Preparation Steps
  1. Grate the zucchini and sprinkle with kosher salt. Squeeze out excess moisture.
  2. Combine zucchini, ground chicken, garlic, chives, salt, and pepper in a bowl. Form small patties.
  3. Chill the patties in the refrigerator for at least 15 minutes.
  4. Make the creamy cilantro sauce by blending cilantro, garlic, mayonnaise, cottage cheese, and vinegar until smooth.
  5. Heat oil in a skillet. Cook the patties for about 4 minutes on each side until golden brown.
  6. Serve the Chicken Zucchini Poppers with creamy cilantro sauce for dipping.
