  • 1 cup creamy peanut butter or almond/sunflower seed butter
  • 1/3 cup maple syrup or honey/agave
  • 2 cups old fashioned rolled oats quick oats can work but may alter texture
Topping Ingredients
  • 1 cup chocolate chips use vegan chocolate for dairy-free
  • 1 teaspoon oil for melting chocolate
  • flaky sea salt optional

Method
 

Step-by-Step Instructions
  1. Combine 1 cup of creamy peanut butter with 1/3 cup of maple syrup in a mixing bowl. Mix until smooth.
  2. Add 2 cups of old-fashioned rolled oats to the mixture and stir until fully coated.
  3. Scoop the mixture into silicon molds and press down firmly.
  4. Add a small dollop of peanut butter on top of each cup, if desired, and freeze for 20 minutes.
  5. Melt 1 cup of chocolate chips with a teaspoon of oil in the microwave until smooth.
  6. Drizzle the melted chocolate over the cups and freeze again for 20 minutes to set.
  7. Remove from molds and sprinkle with flaky sea salt if desired before serving.
