Step-by-Step Instructions
  1. Rinse and prepare the watermelon and cucumber under cold running water. Pat them dry.
  2. Slice the watermelon in half and dice it into 1-inch cubes. Place in a mixing bowl.
  3. Halve the cucumber lengthwise, scoop out seeds if necessary, and slice into half-moon shapes. Add to the bowl.
  4. Chop fresh mint leaves and sprinkle over the mixture. Add feta cheese if desired.
  5. In a small bowl, whisk together olive oil, lime juice, salt, and pepper until well combined.
