- In a medium bowl, whisk together honey, lime juice, and minced fresh mint until well combined and slightly thickened, about 2 minutes.
- Gently wash and dry strawberries and blueberries. Remove stems from strawberries and chop them into bite-sized pieces. Combine in a large mixing bowl.
- Slice watermelon into rounds and use a star-shaped cookie cutter to cut out star shapes from the slices.
- Pour the honey-lime dressing over the mixed fruit and gently toss until all the fruit is coated.
- Optionally garnish with lime zest or additional mint leaves before serving. Serve immediately or refrigerate for up to 2-3 days.
