  • 1 teaspoon Vanilla Extract can substitute with almond extract
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground Cinnamon optional
  • 1 1/2 cups All-Purpose Flour or gluten-free flour with adjusted liquid
For the Nutty Crunch
  • 1 cup Chopped Walnuts lightly toasted

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and prepare your muffin tin with liners or grease.
  2. Mash the ripe bananas in a large bowl, then mix in granulated sugar, brown sugar, and vegetable or coconut oil. Stir in vanilla extract.
  3. Sprinkle baking soda, salt, and optional ground cinnamon over the mixture and gently fold in.
  4. Fold in the all-purpose flour until just combined, allowing a few lumps.
  5. Gently fold in the chopped walnuts.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  8. Cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
