  • 2 slices Italian or white bread Whole wheat can be used for a healthier option.
  • 2 slices White American cheese Substitute with cheddar for a sharper taste.
  • 2 slices Baby Swiss Gruyere also works well for a richer profile.
  • 1 tbsp Butter Ghee or margarine can be used as alternatives.
  • 4 slices Pickles Add crunch and acidity; omit if preferred.

Method
 

Preparation Steps
  1. In a small bowl, mix together the ketchup, chopped chipotle, adobo sauce, and balsamic vinegar until well combined. Set aside.
  2. Take two slices of bread and layer a slice of white American cheese, followed by a slice of meatloaf, then another slice of cheese, and top with the second piece of bread.
  3. Spread a thin layer of butter on the top and bottom of each assembled sandwich.
  4. Preheat a skillet over medium heat, then place the butter-side down sandwiches into the skillet.
  5. Cover the skillet loosely with aluminum foil and cook until the bottom is a deep golden brown, about 4 minutes.
  6. Carefully flip each sandwich and cook the other side for an additional 3-4 minutes until golden brown.
  7. Remove from the skillet and let the sandwiches rest briefly. Slice in half and serve warm with the chipotle ketchup on the side.
