- In a small bowl, mix together the ketchup, chopped chipotle, adobo sauce, and balsamic vinegar until well combined. Set aside.
- Take two slices of bread and layer a slice of white American cheese, followed by a slice of meatloaf, then another slice of cheese, and top with the second piece of bread.
- Spread a thin layer of butter on the top and bottom of each assembled sandwich.
- Preheat a skillet over medium heat, then place the butter-side down sandwiches into the skillet.
- Cover the skillet loosely with aluminum foil and cook until the bottom is a deep golden brown, about 4 minutes.
- Carefully flip each sandwich and cook the other side for an additional 3-4 minutes until golden brown.
- Remove from the skillet and let the sandwiches rest briefly. Slice in half and serve warm with the chipotle ketchup on the side.
