Ingredients
  

For the Tofu Marinade
  • 14 oz Firm Tofu Press before slicing to remove excess water for better flavor absorption.
  • 1/4 cup Soy Sauce Use tamari for gluten-free.
  • 2 tablespoons Sesame Oil
  • 1 tablespoon Maple Syrup Agave syrup can be used.
  • 1 tablespoon Rice Vinegar
For the Vegetables
  • 1 Cucumber Thinly sliced.
  • 1 large Carrot Julienned.
  • 1/2 cup Radishes Thinly sliced.
  • 1 small Jalapeño Thinly sliced; deseeding reduces spiciness.
  • 1/4 cup Fresh Cilantro Roughly chopped.
For the Sandwich
  • 1 whole French Baguette or Hoagie Rolls Should be crusty outside, soft inside.
  • Mayonnaise To taste; mix with sriracha or honey for a kick.

Method
 

Preparation
  1. In a shallow dish, combine soy sauce, sesame oil, maple syrup, and rice vinegar. Whisk until well blended.
  2. Press the firm tofu to remove excess moisture, then slice it into 1/2-inch thick pieces. Marinate for at least 30 minutes.
  3. Heat a skillet over medium heat and cook marinated tofu slices for about 4-5 minutes on each side until golden brown.
  4. Combine sliced cucumber, julienned carrot, radishes, and jalapeño in a medium bowl; sprinkle salt and let sit for 5 minutes.
  5. Slice the baguette in half and toast each half in the oven for about 3-4 minutes until crisp.
  6. Spread mayonnaise on the inside of each baguette half. Layer in tofu slices, then top with vegetable mix and chopped cilantro.
  7. Close the sandwich and slice in half if desired. Serve immediately.
