Preparation
- In a shallow dish, combine soy sauce, sesame oil, maple syrup, and rice vinegar. Whisk until well blended.
- Press the firm tofu to remove excess moisture, then slice it into 1/2-inch thick pieces. Marinate for at least 30 minutes.
- Heat a skillet over medium heat and cook marinated tofu slices for about 4-5 minutes on each side until golden brown.
- Combine sliced cucumber, julienned carrot, radishes, and jalapeño in a medium bowl; sprinkle salt and let sit for 5 minutes.
- Slice the baguette in half and toast each half in the oven for about 3-4 minutes until crisp.
- Spread mayonnaise on the inside of each baguette half. Layer in tofu slices, then top with vegetable mix and chopped cilantro.
- Close the sandwich and slice in half if desired. Serve immediately.
