Method
 

Steps
  1. Season the chicken with salt and drizzle with Shaoxing cooking wine. Let it sit for 10 minutes.
  2. Bring water to a boil in a pot. Place a steaming rack inside, ensuring it sits above the water.
  3. Arrange seasoned chicken on a heatproof plate and steam for about 30 minutes until cooked through.
  4. Let the chicken rest in the covered pot for an additional 10 minutes.
  5. Mix grated ginger, sliced green onions, salt, sugar, and optional chicken bouillon in a bowl for the sauce.
  6. Heat oil in a skillet and pour over the ginger scallion mixture to infuse flavors.
  7. Serve the chicken with the ginger scallion sauce drizzled on top and garnish with extra green onions.
