  • 8 Flour Tortillas soft taco-sized
  • ½ cup Vegetable Oil for frying, can substitute with olive or canola oil
For the Filling
  • 1 pound Ground Beef 80/20, can substitute with turkey or meat alternative
  • ¾ cup Water for taco seasoning
  • 1 packet Taco Seasoning use homemade or Taco Bell brand
  • 15 ounces Refried Beans can use black beans as a substitute
For Assembly and Toppings
  • 10 ounces Enchilada Sauce taco sauce can be used as substitute
  • 2 cups Shredded Mexican Cheese Blend for topping
  • Toppings green onions, black olives, iceberg lettuce, diced tomatoes, or others

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper.
  2. In a large skillet over medium-high heat, add the ground beef and cook until browned, about 6–8 minutes. Drain excess fat.
  3. Mix the taco seasoning with ¾ cup of water in the skillet with the cooked beef. Bring to a boil, then simmer for 5 minutes until the sauce thickens.
  4. Heat about ½ inch of vegetable oil over medium heat and fry each tortilla for 3–4 minutes on each side until golden brown and crispy.
  5. Microwave the refried beans for about 30 seconds. Spread a layer of beans on half the fried tortillas and top with the seasoned beef. Place the remaining tortillas on top.
  6. Pour the enchilada sauce over each stack of tortillas and sprinkle with shredded cheese.
  7. Place the assembled pizzas on the prepared baking sheet and bake for 8–10 minutes, until the cheese is melted and bubbly.
  8. Customize with fresh toppings, slice, and serve hot!
