- Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper.
- In a large skillet over medium-high heat, add the ground beef and cook until browned, about 6–8 minutes. Drain excess fat.
- Mix the taco seasoning with ¾ cup of water in the skillet with the cooked beef. Bring to a boil, then simmer for 5 minutes until the sauce thickens.
- Heat about ½ inch of vegetable oil over medium heat and fry each tortilla for 3–4 minutes on each side until golden brown and crispy.
- Microwave the refried beans for about 30 seconds. Spread a layer of beans on half the fried tortillas and top with the seasoned beef. Place the remaining tortillas on top.
- Pour the enchilada sauce over each stack of tortillas and sprinkle with shredded cheese.
- Place the assembled pizzas on the prepared baking sheet and bake for 8–10 minutes, until the cheese is melted and bubbly.
- Customize with fresh toppings, slice, and serve hot!
