For the Crumb Topping
  • 1 cup all-purpose flour This is the base of the crumble.
  • 1 cup oats Can be omitted for a smoother topping.
  • 3/4 cup brown sugar Granulated sugar can substitute.
  • 1 teaspoon cinnamon Optional for a neutral flavor.
  • 1 teaspoon baking powder Helps lighten the mixture.

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine strawberries, rhubarb, sugar, cornstarch, and lemon juice. Stir gently and let sit for 10 minutes.
  3. In another bowl, whisk together the flour, oats, brown sugar, cinnamon, baking powder, and a pinch of salt. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Press two-thirds of the crumb mixture into the bottom of the prepared baking dish. Spread the fruit filling evenly over crust.
  5. Sprinkle the remaining crumb mixture over the fruit filling and bake for 40-45 minutes until golden brown.
  6. Cool in the pan for at least 30 minutes before slicing into squares.
