Baking Instructions
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a large mixing bowl, combine strawberries, rhubarb, sugar, cornstarch, and lemon juice. Stir gently and let sit for 10 minutes.
- In another bowl, whisk together the flour, oats, brown sugar, cinnamon, baking powder, and a pinch of salt. Cut in cold butter until the mixture resembles coarse crumbs.
- Press two-thirds of the crumb mixture into the bottom of the prepared baking dish. Spread the fruit filling evenly over crust.
- Sprinkle the remaining crumb mixture over the fruit filling and bake for 40-45 minutes until golden brown.
- Cool in the pan for at least 30 minutes before slicing into squares.
