- In a skillet over medium heat, cook bacon until golden brown and crispy, about 8–10 minutes. Transfer to paper towel to blot grease.
- Once cooled, chop bacon into bite-sized pieces. Finely chop the onion if using.
- In a large mixing bowl, whisk together mayonnaise, sugar or honey, white vinegar, salt, and black pepper. Adjust seasoning to taste.
- Add broccoli, sunflower seeds, raisins, and bacon to the bowl with dressing. Mix gently.
- Toss all ingredients until well coated. Ensure broccoli is evenly distributed.
- Cover bowl with plastic wrap and refrigerate for at least 30 minutes before serving.
