Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a casserole dish.
  2. Chop the sweet potatoes, onion, and green pepper into small pieces and set aside.
  3. Heat avocado oil in a Dutch oven and sauté onion and green pepper for 3-4 minutes.
  4. Add sweet potatoes and cook for an additional 5-6 minutes, then add minced garlic for 1 minute.
  5. Transfer the sautéed mixture to the greased casserole dish.
  6. In the same Dutch oven, cook the turkey sausage until browned and add to the vegetable mixture.
  7. Whisk together eggs, milk, thyme, salt, and pepper in a mixing bowl, then add shredded cheese.
  8. Pour the egg mixture over the sausage and vegetable blend and stir gently.
  9. Bake in the preheated oven for 40-45 minutes until the center is firm.
  10. Let the casserole rest for 15 minutes before serving.
