- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch pan by greasing and lining it with parchment paper.
- In a mixing bowl, combine mashed sweet potato, melted coconut oil (or butter), and brown sugar. Stir until smooth and creamy.
- Add eggs (or flax eggs) one at a time, stirring well after each addition. Then mix in the vanilla extract.
- In another bowl, whisk together cocoa powder, flour, baking powder, and salt.
- Gradually fold the dry ingredients into the sweet potato mixture, combining gently.
- If using, gently fold in the chocolate chips.
- Spread the batter into the prepared baking pan and bake for 25 to 30 minutes.
- Allow the brownies to cool in the pan for 15-20 minutes before lifting them out using the parchment paper.
