  • 1 tsp Vanilla Extract opt for pure vanilla extract
  • 1 tsp Baking Powder check for freshness
  • 1/4 tsp Salt
  • 1 cup All-Purpose Flour or Gluten-Free Flour Blend use a one-to-one gluten-free blend if needed

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch pan by greasing and lining it with parchment paper.
  2. In a mixing bowl, combine mashed sweet potato, melted coconut oil (or butter), and brown sugar. Stir until smooth and creamy.
  3. Add eggs (or flax eggs) one at a time, stirring well after each addition. Then mix in the vanilla extract.
  4. In another bowl, whisk together cocoa powder, flour, baking powder, and salt.
  5. Gradually fold the dry ingredients into the sweet potato mixture, combining gently.
  6. If using, gently fold in the chocolate chips.
  7. Spread the batter into the prepared baking pan and bake for 25 to 30 minutes.
  8. Allow the brownies to cool in the pan for 15-20 minutes before lifting them out using the parchment paper.
