Method
 

Step-by-Step Instructions
  1. Dice the fresh pineapple into bite-sized chunks and slice the cucumber into small cubes or half-moons.
  2. Thinly slice the red onion and finely chop the jalapeño, if using. Add these to a large mixing bowl with chopped cilantro.
  3. In a small bowl, whisk together the lime juice, honey, olive oil, salt, and pepper until smooth.
  4. Pour the dressing over the salad ingredients and toss gently to combine.
  5. If using, sprinkle feta cheese over the salad and fold it in gently.
  6. Cover and refrigerate for about 30 minutes to allow flavors to meld.
  7. Before serving, stir the salad gently and drain excess liquid if needed.
