  • 1/2 cup sweet chili sauce
  • 4 pieces tortillas soft flour, corn, or gluten-free

  • 1 medium cucumber sliced thinly
  • 1 medium carrot shredded or julienned
  • 1/4 medium red onion thinly sliced
For the Creamy Touch
  • 1 medium avocado sliced
  • 1/2 cup shredded cheese optional
For Garnishing
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice freshly squeezed
  • salt to taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and bake chicken for 25-30 minutes until cooked. Shred or dice it once cooled.
  2. Combine the cooked chicken with sweet chili sauce in a large bowl, mixing until evenly coated.
  3. Wash and shred your lettuce, slice cucumber, shred or julienne carrots, and thinly slice red onion. Slice avocado just before assembly.
  4. Lay tortillas flat on a clean surface, optionally spreading mayonnaise or Greek yogurt in the center.
  5. Layer shredded greens, sweet chili chicken, carrots, cucumber, red onion, avocado, and cheese on each tortilla.
  6. Drizzle with lime juice and season with salt and pepper before folding.
  7. Roll the tortilla from the bottom, folding the sides in as you go. Slice in half if desired.
