- Preheat your oven to 375°F (190°C) and bake chicken for 25-30 minutes until cooked. Shred or dice it once cooled.
- Combine the cooked chicken with sweet chili sauce in a large bowl, mixing until evenly coated.
- Wash and shred your lettuce, slice cucumber, shred or julienne carrots, and thinly slice red onion. Slice avocado just before assembly.
- Lay tortillas flat on a clean surface, optionally spreading mayonnaise or Greek yogurt in the center.
- Layer shredded greens, sweet chili chicken, carrots, cucumber, red onion, avocado, and cheese on each tortilla.
- Drizzle with lime juice and season with salt and pepper before folding.
- Roll the tortilla from the bottom, folding the sides in as you go. Slice in half if desired.
