Step-by-Step Instructions
  1. Prepare the Slow Cooker: Place the boneless, skinless chicken at the bottom of the slow cooker.
  2. Make the Sauce: Whisk together sweet chili sauce, soy sauce, rice vinegar, honey, minced garlic, and grated ginger.
  3. Add Vegetables: Layer sliced red and yellow bell peppers and onion on top of the chicken and sauce.
  4. Combine and Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  5. Thicken the Sauce: Mix cornstarch with water to create a slurry and add to the slow cooker for the last 30 minutes.
