Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare a 13x9 inch baking dish by greasing or lining with parchment paper.
- In a large mixing bowl, combine 2 cups of all-purpose flour and 1/4 cup of granulated sugar. Cut in 1 cup of softened unsalted butter until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared dish and bake for 15 minutes.
- In a separate bowl, whisk together 3 eggs until frothy. Mix in 2 cups of granulated sugar, 1/3 cup of flour, and 1/2 teaspoon of salt until smooth.
- Fold in 4 cups of diced fresh rhubarb into the egg mixture until evenly coated.
- Pour the prepared rhubarb filling over the warm crust, smoothing the top with a spatula. Bake for an additional 40-45 minutes or until the filling is set.
- Allow to cool in the pan for at least 30 minutes, then slice into squares.

Notes
Cutting the rhubarb into even pieces ensures uniform cooking. Let the bars cool completely before slicing for the best texture.
