Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare a 13x9 inch baking dish by greasing or lining with parchment paper.
  2. In a large mixing bowl, combine 2 cups of all-purpose flour and 1/4 cup of granulated sugar. Cut in 1 cup of softened unsalted butter until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared dish and bake for 15 minutes.
  3. In a separate bowl, whisk together 3 eggs until frothy. Mix in 2 cups of granulated sugar, 1/3 cup of flour, and 1/2 teaspoon of salt until smooth.
  4. Fold in 4 cups of diced fresh rhubarb into the egg mixture until evenly coated.
  5. Pour the prepared rhubarb filling over the warm crust, smoothing the top with a spatula. Bake for an additional 40-45 minutes or until the filling is set.
  6. Allow to cool in the pan for at least 30 minutes, then slice into squares.
