- Preheat your oven to 400°F (200°C) and pat the chicken thighs dry with paper towels. Arrange in a single layer in an oven-safe skillet.
- In a mixing bowl, whisk together minced garlic, honey, soy sauce, and rice vinegar until well blended.
- Heat olive oil in the skillet over medium-high heat. Place the chicken thighs skin-side down and sear for 5-7 minutes until golden brown.
- Flip the chicken thighs and pour half of the honey garlic sauce over them, ensuring they’re coated.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- Remove from oven and let the chicken rest for 5 minutes before serving. Drizzle remaining sauce over and garnish with chopped green onions.
