Step-by-Step Instructions for Jalapeno Peach Chicken
  1. In a medium bowl, combine the peach preserves, extra virgin olive oil, soy sauce, apple cider vinegar, Dijon mustard, and minced garlic. Whisk until well blended.
  2. Pat the chicken thighs dry and season them with kosher salt, black pepper, and red pepper flakes.
  3. Heat a large skillet over medium heat, add olive oil, and sear the chicken thighs for about 5 minutes.
  4. Remove the chicken and add sliced jalapenos to the skillet, sauté for about 3 minutes.
  5. Add sliced peaches to the skillet with jalapenos and cook for an additional 3 minutes.
  6. Pour the peach glaze into the skillet, stir gently until everything is coated and the glaze thickens.
