  • 2 tablespoons Canola Oil or vegetable oil

  • 2 tablespoons Honey or maple syrup for vegan option
  • 2 tablespoons White Balsamic Vinegar or red wine vinegar
  • 1 teaspoon Kosher Salt adjust to taste
  • 1/2 teaspoon Black Pepper adjust to taste
For the Salad
  • 4 slices Bacon or turkey bacon
  • 4 cups Romaine Lettuce or spinach, mixed greens
  • 1 cup Strawberries sliced or other berries
  • 1 unit Avocado or omit, try feta cheese
  • 1 cup Corn Kernels frozen corn works well

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together whole grain Dijon mustard, green onions, olive oil, honey, white balsamic vinegar, salt, and pepper until smooth.
  2. Place the chicken thighs in a resealable bag and pour the remaining dressing over them. Seal and massage to coat.
  3. Preheat your grill or skillet over medium heat.
  4. Remove chicken from the bag, brush with canola oil, season with salt and pepper, and grill for about 10 minutes per side until cooked.
  5. In another pan, cook bacon until crispy, about 5-7 minutes, and drain on paper towels.
  6. In a large bowl, combine chopped romaine, grilled chicken, bacon, strawberries, avocado, and corn.
  7. Drizzle reserved dressing over salad, toss gently and serve immediately.
